Ingredients
- 50g dark chocolate (75% cocoa solids), chopped
- 1 teaspoon ground ginger
- 110g self-raising flour
- 10g cocoa
- 1 teaspoon bicarbonate of soda
- 50 g unsalted butter, diced
- 40g sugar
- 50 g golden syrup
- icing sugar to decorate
Method
Preheat the oven 180°C
Take the flour, cocoa, ginger and bicarbonate of soda and Sift into a mixing bowl.
Rub in the butter until the mixture is like breadcrumbs and stir in the sugar and chocolate.
Add the golden syrup, mix everything with a spatula and bring the mix together with your hands.,
divide the mixture into14, and roll each into a ball.
Place on a lined baking sheet, well-spaced, flatten each one slightly,
bake on the centre shelf for 15-20 minutes.
Cool on the baking tray for a few minutes then, cool on wire rack.
Dust with icing sugar
