Ingredients
- 4 small apples
- 225g demerara sugar
- 110 ml water
- ½tsp vinegar
- 25g butter
- 2tbsp golden syrup
- 1tsp food colouring
- Cocoa nibs
- butter/ oil for greasing the sheet
Method
When we buy apples from the shops they almost always have a waxy coating to protect them during shipping, we dont want to eat that, it;s easy to get rid of just pour some boiling water over the apples then dry them well with some clean kitchen paper.
Combine the water and the sugar in a saucepan and heat over a medium heat, stirring until the sugar dissolves.
Once the sugar has dissolved, add the butter, vinegar, syrup and any food colouring you choose
Increase the heat to moderate and bring to the boil, cooking the syrup until it reached 138°C (use a sugar thermometer to measure accurately).
Skewer the apples with the sticks then dip in the hot syrup, trying to coat as much of the apples as possible in the syrup.
Leave the toffee apples to cool and harden on a lighly oiled baking tray.
