Ingredients
- 500g strawberries, hulled and halved, bigger ones cut into 3
- 2 tablespoons caster sugar
- 1 tbs lemon juice
Method
Scatter the sugar over the prepared strawberries, toss lightly and leave for 5–10 minutes to set the juices running.
Then add the lemon juice, and toss again. Leave to macerate for at least an hour – ideally 3–4 hours – to draw out the juices from the fruit.
Stir again, just before you serve the strawberries with the syrupy juices. or decorate a cheesecake with them
